This recipe is so simple you’ll have it memorized after making it a time or two. It makes the house smell incredible, and it is simply delicious. Once fall rolls around, and I start baking, this is the one baked good my husband consistently requests. Enjoy.
Start by dicing up a small apple. I used a Honeycrisp this time because it was what was in the house.
Next cream the sugar and shortening together in a large bowl.
Add the egg, and mix until well blended and smooth.
Add the applesauce. Don’t be alarmed by the texture change, it will be moist and delicious.
Combine the dry ingredients together in a separate bowl, and add gradually to the creamed mixture.
Lastly mix in the apples and walnuts by hand. Scoop the batter into 8 mini-loaf pans, or 2 regular loaf pans that have been sprayed generously with non-stick spray.
Bake for 30 minutes at 350°F. Allow to cool 10 minutes before removing from pan. Enjoy.
